This week I am discussing This years projects at the Alaska cabin, but before that we are taking a trip to the big dumps, and man are there a TON of eagles at this place!

I am a complete novice builder who grew up in sunny California and thought it would be an awesome idea to build my own off grid cabin on raw land in Alaska…what could go wrong?

I have never built a thing in my life so why not a house? OH! and I can live in a trailer while I do it….and work full time! Did I mention that I am out of shape, over weight and 60? What could go wrong?

FRESHLY MILLED PIZZA DOUGH:
Two 12″ pizza pans
2 cups warm water
4 to 4 1/2 cups freshly milled hard white wheat
4 tsp quick rising (instant) yeast
1/4 cup oil
2 tsp salt

HOW TO MAKE IT:
In a large mixing bowl, combine warm water, and flour and mix just until a soft dough forms.
Let rise for 20 minutes to let gluten develop.
Sprinkle yeast over top and mix to combine. While mixing, add oil and salt.
Knead dough until smooth and elastic, about five minutes.
Cover tightly and refrigerate for 24 hours or up to 3 days. You may also use the dough right away if desired.
PIZZA:
When ready to use, bring pizza dough to room temperature.
Preheat oven to 400°F, 200°C.
Divide dough into 2 equal portions.
Roll out each portion into a 12″ circle.
Place on prepared pizza pans.
Brush lightly with olive oil or pizza sauce, and add your choice of toppings.
Bake in preheated oven for 15 to 20 minutes, until crust is lightly browned. Enjoy!

Where The Moose Outnumber The People | Our First Alaskan Winter

Winter is *slowly* coming to an end here in Alaska.

Slowly may be a bit of an understatement! The whole reason this week’s video is not of us finishing up the outhouse on the property is because of the wild winds we are getting right now! I don’t even want to know what the wind chill is out there.

So, today we pay tribute to the beautiful winter we have had so far. Even these less-than-amazing weather days have their own beauty.

Every time I type one of these descriptions, all I can think about is what is to come. Every week I want to talk about the incoming work on the outhouse or garden or eventually the cabin of my dreams. This week it was nice to reminisce on how far we’ve come up to now. We have truly been living in the best time of our lives and it has been an honor to share it with you all.

SPRING in Alaska already? time for some cleanup!

Alaska has some strange seasons. for the last month we were cold beyond belief and for the last 2 weeks we have hit at least 40f everyday! can it be Spring in Alaska already? time for some cleanup outside!

An update on the chickens, a spring cleanout of their coop, digging out the fire pit and a grilled cheeseburger followed by an incredibly glorious sunrise!

I am not sure if this is spring or not Alaska, but I will take it!

Drumroll Please!!! Our Cozy Cabin Gets a Rustic, CHIC Bdrm Addition!

It’s finally done & we’re moving in baby!!! We started our master bedroom addition to our tiny cabin in the woods last summer. Finally seeing it all come together is so exciting! We desperately needed the extra space in our cabin & now Joe & I have a getaway space that’s private, intimate and cozy. Come along with us as we finish up the final touches and decorate with some of my favorite rustic decor! This cabin addition was one of the biggest projects Joe & I have ever taken on, and we’re so pleased with the outcome. Northern Lights & Canning Pike Chowder | Fairbanks Alaska Supply Run

With temperatures warming up there is strong urge to prepare for the spring season just around the corner. We utilize the tractor to clear space for supplies and milling, then make homemade pike chowder and pressure can the soup to enjoy at a later date. Finally we head to Fairbanks for a jam packed supply run.
